Amyspark 0fc000b10b meson: properly escape backslashes when setting CONFIGURATION macro 
This fixes compiling when using Windows-style paths in the Meson
configuration line, e.g.

> '-Dc_args=-IC:\mpv\subprojects\amf-headers'
